Sassafras White Ancestral Sparkling | Camberra & Tumbarumba, NSW | 2019

With 70% Savagnin from the Canberra District and 30% Chardonnay from Tumbarumba, this pale lemon coloured sparkling is fresh and fantastic! It’s teeming with green apple, lemon pith, stone fruit and yeasty creamy hints that create the impression of richness on the palate that makes for quite the luscious drop! Due to a long, slow and cold ferment the palate is seem-less and silk like and seems to slip down the throat a little quick!

And… The name ‘Sassafras’ comes from Australia’s two native species of Sassafras tree and by purchasing a Sassafras wine, you help Paul continue to donate funds to Bush Heritage Australia for their practical work in habitat conservation.
